I cannot get used to time flying so quickly; it seems that as soon as I get accustomed to a situation, things are changing again, swapped for even more beautiful things though. It feels like we’ve just entered autumn, and yet, here we are, getting much closer to Halloween and the much colder season than ever. Even though this is quite unsettling, I kind of love how life is unfolding, giving us a little magic to dream on every single day. That rapidity also makes me realise we should all be so thankful to wake up the morning after, simply because life could stop at any time…But enough of this gloomy talk, let’s move on to something way more delicious – the very beginning of our Halloween Treats Collection!
As we’re all waking up and start our day with a delicious breakfast, I thought it would be a good idea to start by sharing a breakfast recipe with you. Well, do not be afraid, there’s nothing weird nor scary about this recipe; I just find that its taste and look perfectly fit into those shady Halloween times. About the recipe itself, I do not think there is something quicker and more scrumptious that this one; you can throw it together in no time in the evening and have a tasty, delightful and practical breakfast waiting for you the following morning. It just requires a few ingredients that you can find in every store here in Switzerland. For the nut butter, either follow the recipe I shared a while ago, which is much quicker and cheaper, or go to an “organic shop”, where you’ll certainly find it. With this breakfast in your recipe book, you’ll have no excuse not to eat in the morning…and you’ll have no possibility but to wake up, simply because it is irresistible!
Chia seeds are a great thing to incorporate not only in one’s diet but also in one’s breakfasts. Their fibre content will keep you full for the entire morning and keep your digestive system healthy. They are also full of omega-3 fatty acids, which are essential for the health and reactivity of our entire organism, heart and brain, and help the body absorb all kinds of vitamins (that the seeds also provide)! By bringing a whole lot of minerals that can replace the ones lost when exercising, and especially zinc, that helps improving stamina, endurance and energy levels’ harmony, it is a great thing to add in the morning before a workout or a very busy day. Coconut oil and almond butter, which already are giving this breakfast some extra nutty and heavenly flavours, are also known to be boosting the brain’s functions, its ability to memorise and focus, thanks to their very healthy fatty-acid contents. Be ready to kick your day off with these babies; chia seeds are the ones you’d like to get as treats on the 31st trick-or-treating!
The Best Chia Pudding Breakfast Ever
Portions: 1 – 2 servings.
Preparation time: 10 minutes.
Refrigeration time: 6 hours or overnight.
For the pudding:
- 4 tbsp of chia seeds
- 1 tbsp of hemp or flax seeds
- 1 tbsp of almond butter
- 1 tbsp of coconut oil
- 1 tbsp of maple syrup
- 1 tsp of cinnamon
- 1 tsp of cardamom or ginger
- 400ml of plantbased milk (almond, oat, spelt, etc.)
For the toppings:
- A fig
- Fresh raspberries
- Some Homemade Newtella (Hazelnut Butter)
- A spoonful of Homemade Granola
(1) Start by mixing all the dry ingredients together in a mixing bowl, up to the spices. Then pour the plantbased milk over, and stir it all in correctly, making sure that all the chia seeds are covered.
(2) Transfer into a serving dish or into a glass jar, cover and refrigerate overnight.
(3) In the morning, no matter if you’re eating it at home or on the go, top the pudding with fresh raspberries, fig slices, some Chocolate Hazelnut Butter or any other type and some Homemade Granola. Heaven on earth, I promise!
