Sweet Potato Falafels & Roasted Peppers Quinoa Buddha Bowl

Falafels need to be reinvented, redefined, and remodelled. Even though you may find a few places where they are preparing them in a healthy way, this once healthy food has now become synonym of that greasy junky food people eat because they feel less guilty than eating a burger. Usually eaten in a wrap, I am today offering you another way to enjoy those little balls of happiness: a Buddha Bowl. There is not real definition of what a Buddha Bowl is. What you’ve got to know is that a Buddha Bowl basically is a bowl which you throw a whole lot of goodness in, drizzle some sauce on top and parachute a few seeds or sprouts. Here you are. It’s been a month since the blog celebrated its first ever birthday. It’s been two months since I felt like experiencing a deep change. All my day-to-day events, whether these are enriching or disturbing, feel like being in total harmony, lining up in my life like tiny soldiers. Even the darkest ones do have their place in that happiness equation. Did I need to pass some kind of “one year” milestone? Am I accepting my life, its ups and downs, and all its surprises, much more than before? I don’t know. What I know for sure though is that life is beautiful, and that I’ll announce all those amazing things to you as soon as possible.

Don’t you feel like these days are the worst of the entire year? You’ve celebrated Christmas with your families and friends, eaten way over your belly capacity, received wonderful presents – books, clothes, unidentified objects or money – as well as touching words & wishes, all of this with glitter on your face and dancing shoes on your feet. And now what? We’re crawling out of bed, wearing sunglasses to hide our lack of sleep, walking (and not tiptoeing) with a coffee in one hand and a glass of lemon water in the other, trying to flush out all the dirt we’ve accumulated in out bodies, crying because we’re not being offered gifts anymore, waiting for it to start all over again on New Year’s Eve. Merry Christmas & Happy New Year My Darlings! Yes indeed I am a little early, but if you’re reading these lines, it might mean that you’ve been following me for quite a while. And therefore, you deserve all my warmest and best wishes as well as a whole lot of deliciousness at the end of what have been a tremendous, sometimes hard, but amazing year.
